Research

Kevin Schalinske, food science and human nutrition professor, was awarded $73,209 from the National Institute of Health in year two of his grant. Schalinske explores dietary intervention strategies to support methyl group metabolism in people with polycystic ovary syndrome (PCOS) using animal models of PCOS. Women with type two diabetes or obesity typically have an abnormal methyl group metabolism, and are at higher risk for PCOS. Schalinske’s dietary intervention involves whole-egg consumption, and studying how it affects people with PCOS and ovarian methyl group metabolism.
