FSHN Alumnus Shares His Love of Culinology®

Iowa State University alumnus Justin Kanthak says cooking is manipulating science.  He talks about this blending of food science and culinary arts, or Culinology® during a recent Worldchefs podcast.

“Understanding how cooking times happen and understanding how reactions happen in time; it is all science,” said Kanthak, chef and food scientist.

Kanthak graduated from ISU with a B.S. in food science technology and a minor in microbiology. He’s now Head of Snacks for Griffith Foods and President of the professional trade organization, the Research Chefs Association (RCA).  He is also a member of Iowa State's food science and human nutrition’s External Advisory Council (EAC).

Kanthak was featured on the podcast World on a Plate.  The series talks with top chefs and experts about food, innovations, and industry news.
