I was responsible for...
I helped cook meals for campers with physical, mental, and developmental disabilities who had a food allergy (most common were gluten free, lactose free, gluten/lactose free, vegetarian, and soy free)
I was able to help revamp their Special Diets Program with the help of the Head Chef, along with helping create new recipes for the camp (and myself!).
My most valuable effort...
I helped recreate some of the recipes that were being used for the campers without dietary needs to those who did have dietary needs. I thought it was valuable because it took my knowledge that I had learned in classes and apply them to real-life situations.
I learned that having someone with multiple dietary needs is a challenge, but it was a challenge worth taking. I learned that different disabilities affect differently with what kinds of food (or lack of food) that people have to go through every day of their life.
I will never forget...
I really enjoyed getting to know the campers, along with the staff that I worked with. I actually enjoyed waking up at 5AM to get to the kitchen and work for 8 hours for something that I am passionate about.
Advice for others...
I say that if you are interested in knowing more about Special Diets and want to create new ways of cooking for people with dietary needs, then try a place like True Friends, or another camp, to get that experience.
